Nawab Pappadoms (also spelled poppadoms or papads) are a beloved staple of Indian cuisine — crispy, light, and utterly addictive. Whether you're serving them as a starter with chutneys, as a side dish with curry, or simply as a snack, knowing how to cook them properly makes all the difference.

What Are Pappadoms?

Pappadoms are thin, crispy flatbreads made from lentil flour (urad dal), spices, and salt. They originate from the Indian subcontinent and are a fixture in Indian restaurants across the UK, typically served before the main meal with a selection of chutneys and pickles. Three Ways to Cook Nawab Pappadoms

Method 1: Deep Frying (Restaurant Style)

Deep frying produces the lightest, most evenly puffed pappadoms — exactly as you'd get in an Indian restaurant.

  1. Heat vegetable oil in a deep pan or wok to 180°C.
  2. Carefully slide one pappadom into the hot oil — it will puff up and expand within seconds.
  3. Use tongs to keep it submerged and cook for 10–15 seconds until golden and crispy.
  4. Remove and drain on kitchen paper. Serve immediately.

Method 2: Grilling

Grilling is a healthier alternative that still produces excellent results.

  1. Preheat your grill to high.
  2. Place pappadoms on a baking tray or directly on the grill rack.
  3. Grill for 20–30 seconds on each side, watching carefully as they can burn quickly.
  4. They're ready when they've puffed up and turned golden.

Method 3: Microwave (Quickest Method)

The microwave method is the fastest and requires no oil.

  1. Place one pappadom on a microwave-safe plate.
  2. Microwave on full power for 30–45 seconds.
  3. Check and add 10-second bursts if needed until crispy.
  4. Note: microwaved pappadoms won't puff as evenly as fried or grilled ones.

What to Serve with Pappadoms

Pappadoms are best served with a selection of accompaniments:

  • Mango chutney — sweet and tangy, the classic pairing
  • Lime pickle — sharp and spicy, a great contrast to the crispy pappadom
  • Mint raita — cool and refreshing yoghurt dip
