Bengal's iconic five-spice.
Panch puran is the whole-seed blend that defines Bengali and Eastern Indian cooking. Five seeds — fenugreek, nigella, cumin, mustard and fennel — each bringing something different to the pot. Sizzle a spoonful in hot oil and you have instantly started a dhal, tarka, pickle or vegetable dish the authentic way. The seeds pop and crackle, releasing their oils and filling the kitchen with that unmistakable Bengali aroma before a single other ingredient has gone in.
This is not a ground spice blend — it is a whole-seed tempering mix, and that distinction matters. The seeds need heat and oil to unlock their full flavour, which is why panch puran always goes in first, before the onions, before the tomatoes, before everything else.

The Five Seeds Explained
Each seed in panch puran plays a specific role. Fenugreek brings a slight bitterness that balances rich sauces. Nigella (kalonji) adds a peppery, onion-like note. Cumin provides the warm, earthy backbone. Mustard seeds pop and add heat and nuttiness. Fennel (saunf) brings a gentle sweetness that rounds the whole blend out. Together they create a flavour that is more than the sum of its parts — distinctly Bengali, instantly recognisable.
How to Use Panch Puran
Heat oil or ghee in a pan until hot. Add a teaspoon or two of panch puran and let the seeds sizzle and pop for 30 to 60 seconds — this is the tarka. Then add your onions, garlic, ginger or whatever the recipe calls for. The tempered seeds stay in the dish and add texture and flavour throughout. Use it in:
- Dhal tarka — the classic Bengali way
- Aloo gobi and saag aloo
- Bengali fish curry and mustard fish
- Pickles and chutneys
- Roasted vegetables and paneer dishes
- Lentil soups and dal makhani
- Egg curry and shakshuka-style dishes
Why Buy 1kg?
If you cook Bengali or Eastern Indian food regularly, a 1kg bag makes sense. Panch puran keeps well in a sealed container for up to two years, and buying in bulk at this price is significantly cheaper than picking up small jars from the supermarket spice aisle. Stock up once and you will not need to think about it for a long time.
